A Nice Website Teaching You How to Cook CHICKEN DUMPLINGS

Recently, I happen to find a great food website called THE WOKS OF LIFE(thewoksoflife.com). This website is built by four Chinese bloggers-Bill, Judy, Sarah and Kaitlin who share their kitchen exploits & travels with other people.The Woks of Life is a site for anyone looking to try their hand at Grade A authentic Chinese cooking and any other great recipes, Asian or otherwise. I can tell all of them are really good at cooking cuisine by themselves from the pictures of the delicious food they have made by hands.

They post a new passage every two or three days teaching you to cook a new dish. Honestly, I am interested in and attracted by almost every cuisine they have made, which are all my type. And I found a post that teaches you how to cook Chicken Dumpling with Shiitake Mushrooms. I payed attention to it because I haven't got a chance eating dumplings for a long time for I study abroad, and dumplings are one of the most important food that Chinese people would make them during Chinese significant festival.

Starting with introducing the dumplings in China, the author Sarah tells us one point that pork filling is very popular with making many kinds of dumplings. But after doing this dish, she is sure that chicken dumplings can total stand up for pork dumplings.

Next, it tells you what ingredient you should prepare for this dish. It gives you a very clear list so that you can get ready completely. And there are also some links linking to the words to tell you what ingredient is that in case that you don't know.

"Put the flour in a large mixing bowl. Gradually add the water to the flour and knead into a dough. This process should take about 10 minutes. Cover with a damp cloth and let the dough rest for an hour."

"In a large pan, heat 2 tablespoons oil over medium heat. Add the onion and cook until translucent. "

"Then add the chopped fresh and reconstituted mushrooms. "

"Cook for 8-10 minutes, and transfer to a bowl, along with the ground chicken, sesame oil, soy sauce, sugar, wine, and 3 tablespoons oil."

"Use a pair of chopsticks to stir the filling together in one direction for about 5 minutes, until the mixture resembles a paste."

And next, it teaches you how to roll out each piece of dumpling wrapper. If you are still confused, you can just go google it. I know it's kind of difficult because, as a Chinese, I still can't roll out a perfect, round one. But remember: the rounder you roll it out, the more perfect it is. What's more, make it neither too thick nor too thin.

And here it is! Keeping making it until all are assembled.

After all that, put some oil into the pan. Set the dumplings into the pan after the oil is hot. Sarah's blog will tell you more details about it if you want to know.

You can serve them with chili oil as the picture showed, or serve with soy sauce or your favorite dipping sauce
